Ingredients
  

  • 2 Eggs Beaten
  • 1 cup Fresh spinach Chopped
  • 1/4 cup Feta cheese Crumbled
  • 1 tbsp Olive oil
  • to taste Salt and pepper

Instructions
 

  • Heat olive oil in a non-stick skillet over medium heat.
  • Add spinach and sauté until wilted, about 2 minutes.
  • Pour beaten eggs into the skillet and cook until the edges start to set.
  • Sprinkle crumbled feta cheese evenly over the egg mixture.
  • Fold the omelette in half and cook until eggs are fully set, about 2 more minutes.
  • Season with salt and pepper to taste before serving.

Notes

For extra flavor, consider adding some chopped sun-dried tomatoes or a pinch of oregano.
