Instructions
Heat olive oil in a non-stick skillet over medium heat.
Add spinach and sauté until wilted.
Add beaten eggs to the skillet and cook, stirring gently, until they are just set. Season with salt and pepper.
Warm the tortillas in a dry pan or microwave.
Place the egg and spinach mixture onto each tortilla, sprinkle with cheese if using, and roll up to form a wrap.
Serve immediately and enjoy.
Notes
For added flavor, try adding diced tomatoes or avocado slices.
