Equipment

  • 1 Non-stick skillet For cooking the eggs and spinach
  • 1 Spatula For stirring

Ingredients
  

  • 4 Eggs Beaten
  • 2 cups Fresh spinach Washed and chopped
  • 2 Whole wheat tortillas
  • 1 tbsp Olive oil
  • Salt and pepper to taste
  • 1/4 cup Shredded cheese Optional

Instructions
 

  • Heat olive oil in a non-stick skillet over medium heat.
  • Add spinach and sauté until wilted.
  • Add beaten eggs to the skillet and cook, stirring gently, until they are just set. Season with salt and pepper.
  • Warm the tortillas in a dry pan or microwave.
  • Place the egg and spinach mixture onto each tortilla, sprinkle with cheese if using, and roll up to form a wrap.
  • Serve immediately and enjoy.

Notes

For added flavor, try adding diced tomatoes or avocado slices.
