Follow this simple recipe to bake a classic and fluffy sponge cake, perfect for any occasion or as a base for other layered cakes.

Equipment

  • 1 8-inch round cake pan For baking the cake
  • 1 Electric mixer For beating the batter

Ingredients
  

  • 4 large Eggs At room temperature
  • 200 g Caster sugar
  • 200 g All-purpose flour Sifted
  • 1 tsp Vanilla extract
  • 50 g Butter Melted and cooled

Instructions
 

  • Preheat the oven to 180°C (350°F). Grease and line an 8-inch round cake pan.
  • In a mixing bowl, beat eggs and sugar together with an electric mixer until thick and pale.
  • Gently fold in sifted flour and vanilla extract using a spatula.
  • Pour in melted butter and fold until just combined. Be careful not to deflate the batter.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 25-30 minutes or until a skewer inserted into the center comes out clean.
  • Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.

Notes

For a flavored variation, add lemon zest or substitute a portion of flour with cocoa powder for a chocolate sponge cake.
