Ingredients
  

  • 2 cups All-purpose flour
  • 1/4 cup Granulated sugar
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1/2 cup Unsalted butter Cold and cubed
  • 2/3 cup Milk
  • 1 lb Fresh strawberries Hulled and sliced
  • 1/4 cup Granulated sugar For macerating strawberries
  • 1 cup Heavy whipping cream
  • 2 tbsp Powdered sugar
  • 1 tsp Vanilla extract

Instructions
 

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine flour, sugar, baking powder, and salt.
  • Add cold butter and cut it into the dry ingredients until the mixture resembles coarse crumbs.
  • Pour in the milk and stir until just combined. Do not overmix.
  • Turn the dough onto a floured surface, pat it into a 1-inch thick round, and use a biscuit cutter to cut out biscuits.
  • Place biscuits on the prepared baking sheet and bake for 12-15 minutes or until golden brown.
  • In a bowl, combine sliced strawberries with sugar and let them sit for at least 30 minutes to macerate.
  • In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  • Split the warm biscuits in half and layer with macerated strawberries and whipped cream.
  • Serve immediately and enjoy your Strawberry Shortcake!

Notes

For a lighter version, substitute regular whipped cream with a low-fat version.
