  • 1 Baking dish
  • 1 Knife For hollowing out zucchinis

Ingredients
  

  • 4 Zucchinis Medium-sized
  • 1 cup Breadcrumbs
  • 1/2 cup Parmesan cheese Grated
  • 1 tbsp Fresh parsley Chopped
  • 2 cloves Garlic Minced
  • 2 tbsp Olive oil
  • to taste Salt and pepper

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Cut the zucchinis in half lengthwise and hollow them out using a spoon, leaving a shell.
  • In a bowl, combine breadcrumbs, Parmesan cheese, parsley, garlic, olive oil, salt, and pepper.
  • Fill the hollowed zucchinis with the mixture and place them in a baking dish.
  • Bake in the preheated oven for 25-30 minutes until the zucchinis are tender and the topping is golden brown.
  • Serve hot as a delicious side dish or appetizer.

Notes

Experiment with different fillings like quinoa, mushrooms, or sausage for unique variations.
