  • 1 Large pot For cooking the curry
  • 1 Chopping board For prepping ingredients

Ingredients
  

  • 2 large Sweet potatoes Peeled and cubed
  • 1 can Chickpeas Drained and rinsed
  • 1 onion Onion Chopped
  • 3 cloves Garlic Minced
  • 1 tbsp Curry powder
  • 1 tsp Cumin
  • 1 cup Coconut milk
  • to taste Salt and pepper

Instructions
 

  • In a large pot, heat some oil and sauté the onions and garlic until fragrant.
  • Add the sweet potatoes, chickpeas, curry powder, cumin, salt, and pepper. Stir to combine.
  • Pour in the coconut milk and bring the curry to a simmer. Cover and cook for 20-25 minutes until sweet potatoes are tender.
  • Adjust seasoning as needed and serve hot with rice or bread.

Notes

Feel free to add extra vegetables like spinach or bell peppers for more variation.
