Ingredients
  

  • 2 cups Sweet potato Cooked and mashed
  • 1 cup Oats Rolled oats
  • 1/2 cup Peanut butter Natural creamy peanut butter
  • 1/4 cup Honey Or maple syrup for vegan option
  • 1 tsp Vanilla extract
  • 1/2 tsp Cinnamon Optional
  • 1/4 cup Chia seeds For coating

Instructions
 

  • In a mixing bowl, combine the mashed sweet potato, oats, peanut butter, honey, vanilla extract, and cinnamon. Mix well until fully combined.
  • Take small portions of the mixture and roll into balls using your hands.
  • Roll the balls in chia seeds to coat evenly.
  • Place the energy balls in an airtight container and refrigerate for at least 30 minutes before serving.
