  • 1 Muffin tin
  • 1 Mixing Bowl

Ingredients
  

  • 2 cups All-purpose flour
  • 1 cup Sugar
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1 cup Mashed sweet potato Cooled
  • 1 cup Milk
  • 1/2 cup Oil Vegetable or canola
  • 2 Eggs
  • 1/2 cup Walnuts Chopped
  • 1/4 cup Brown sugar

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a muffin tin with liners.
  • In a mixing bowl, combine the dry ingredients - flour, sugar, baking powder, and salt.
  • In another bowl, mix the wet ingredients - mashed sweet potato, milk, oil, and eggs.
  • Gently fold the wet ingredients into the dry ingredients until just combined.
  • Scoop the batter into the muffin tin, filling each cup 3/4 full.
  • Mix the chopped walnuts and brown sugar in a small bowl.
  • Sprinkle the walnut topping over each muffin cup.
  • Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted comes out clean.
  • Allow the muffins to cool slightly before serving. Enjoy!

Notes

Feel free to add cinnamon or nutmeg to the batter for extra flavor.
