  • 1 Waffle iron
  • 1 Mixing Bowl

Ingredients
  

  • 2 cups All-purpose flour
  • 1 cup Mashed sweet potatoes Cooked and cooled
  • 1/4 cup Brown sugar
  • 2 tsp Baking powder
  • 1/2 tsp Cinnamon
  • 1/2 tsp Salt
  • 2 Eggs
  • 1 1/2 cups Milk
  • 1/4 cup Vegetable oil
  • 1/2 cup Butter Softened
  • 2 tbsp Honey

Instructions
 

  • In a mixing bowl, combine the flour, mashed sweet potatoes, brown sugar, baking powder, cinnamon, and salt.
  • In a separate bowl, whisk together the eggs, milk, and vegetable oil.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Cook in a preheated waffle iron according to manufacturer's instructions.
  • In a small bowl, beat together the softened butter and honey until well combined.
  • Serve the sweet potato waffles with a dollop of honey butter on top.

Notes

For extra sweetness, drizzle maple syrup over the waffles before serving.
