Equipment

Ingredients
  

  • 500 g Pork shoulder Thinly sliced
  • 3 tbsp Achiote paste
  • 1/4 cup Orange juice Freshly squeezed
  • 1/4 cup Pineapple juice Freshly squeezed
  • 3 cloves Garlic Minced
  • 1 tsp Cumin
  • 1 tsp Oregano
  • to taste Salt
  • 8 Corn tortillas Warmed
  • 1 Onion Diced
  • 1 cup Pineapple Diced
  • 1/2 cup Cilantro Chopped

Instructions
 

  • Combine achiote paste, orange juice, pineapple juice, garlic, cumin, oregano, and salt in a blender. Blend until smooth.
  • Marinate the pork in the blended mixture for at least 2 hours or overnight in the refrigerator.
  • Preheat the grill or skillet over medium-high heat.
  • Cook the marinated pork slices until charred and cooked through, about 5-7 minutes per side.
  • Slice the cooked pork thinly and assemble the tacos with pork, diced onion, pineapple, and chopped cilantro on warm corn tortillas.
  • Serve with lime wedges on the side.

Notes

For a more authentic flavor, grill the pork on a vertical spit if possible.
