Equipment

  • 1 Wok or large skillet For stir-frying

Ingredients
  

  • 200 g Firm tofu Cubed
  • 3 Eggs Beaten
  • 1 tbsp Vegetable oil
  • 1 cup Mixed bell peppers Sliced
  • 1 cup Broccoli florets
  • 3 tbsp Soy sauce
  • 2 cloves Garlic Minced
  • to taste Salt and pepper

Instructions
 

  • Heat oil in a wok over medium heat; add garlic and sauté for 30 seconds.
  • Add cubed tofu, season with salt and pepper, and cook until golden brown.
  • Push tofu to one side, pour in beaten eggs, and scramble.
  • Add bell peppers and broccoli, stir-fry for 3-4 minutes.
  • Stir in soy sauce, mix everything well, and cook for another 2 minutes.
  • Serve hot garnished with spring onions.

Notes

For a vegetarian version, omit eggs and add more tofu or other vegetables.
