Equipment

  • 1 Large pot
  • 1 Blender For pureeing the soup

Ingredients
  

  • 800 g Tomatoes Ripe and chopped
  • 1 onion Onion Chopped
  • 2 cloves Garlic Minced
  • 1 tbsp Butter
  • 1 cup Vegetable broth Low-sodium
  • 1/4 cup Fresh basil Chopped
  • to taste Salt and pepper

Instructions
 

  • In a large pot, melt butter over medium heat. Add onions and garlic, sauté until softened.
  • Add chopped tomatoes, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Using a blender, puree the soup until smooth. Return to the pot and stir in fresh basil.
  • Simmer for an additional 5-10 minutes. Season with more salt and pepper as needed.
  • Serve hot with a drizzle of cream or a sprinkle of fresh herbs.

Notes

For a creamy option, add a splash of heavy cream or coconut milk before serving.
