Ingredients
  

  • 1 lb Ground beef Can use turkey or chicken as alternatives
  • 2 cups Bell peppers Chopped (mix of red, green, yellow)
  • 1 cup Onion Chopped
  • 2 cloves Garlic Minced
  • 1 can Diced tomatoes Undrained, 14 oz can
  • 1 cup Rice Uncooked
  • 2 cups Beef broth
  • 1 tsp Italian seasoning
  • to taste Salt and pepper
  • Parsley For garnish, optional

Instructions
 

  • In a large skillet, brown the ground beef over medium heat and drain any excess fat.
  • Add bell peppers, onion, and garlic to the skillet and sauté until vegetables are tender.
  • Stir in diced tomatoes, rice, beef broth, Italian seasoning, salt, and pepper.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until rice is cooked.
  • Remove from heat. Stir and fluff the mixture.
  • Garnish with parsley and serve warm.

Notes

Feel free to use different colored bell peppers for a more vibrant dish. You can also substitute rice with quinoa for a creative twist.
