  • 1 Mandoline slicer For slicing zucchini
  • 1 Mixing Bowl For tossing salad

Ingredients
  

  • 2 medium Zucchini Thinly sliced into ribbons
  • 1 cup Cherry tomatoes Halved
  • 1/2 cup Feta cheese Crumbled
  • 2 tbsp Fresh parsley Chopped
  • 1/4 cup Olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Honey Optional
  • to taste Salt and pepper

Instructions
 

  • In a mixing bowl, combine zucchini ribbons, cherry tomatoes, feta cheese, and parsley.
  • In a separate small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper to make the dressing.
  • Pour the dressing over the salad ingredients and toss gently to combine.
  • Serve the Zucchini Salad chilled and enjoy!

Notes

You can add grilled chicken or shrimp to make this salad a complete meal.
