
Chilaquiles with Eggs Recipe

Ingredients
- 8 Corn tortillas cut into wedges
- 2 cups Salsa verde or roja
- 1/4 cup Vegetable oil for frying
- 1 Avocado sliced for garnish
- 1/2 cup Cotija cheese or queso fresco crumbled
- 1/2 cup Sour cream
- 1/4 cup Cilantro chopped
- 4 Large eggs
- to taste Salt
- to taste Black pepper
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Fry the tortilla wedges until crispy and golden. Remove from the skillet and drain on paper towels.
- Remove excess oil from the skillet, leaving about a tablespoon for the salsa. Add salsa to the skillet and heat until warm.
- Return the fried tortillas to the skillet and gently toss with the salsa until they are well-coated. Cook for a few more minutes until the tortillas have softened slightly in the salsa.
- In a separate frying pan, fry eggs to your liking (sunny-side up is traditional).
- Serve the sauced tortillas on plates, top each with a fried egg, and garnish with crumbled cheese, sour cream, sliced avocado, and chopped cilantro.
- Season with salt and pepper to taste.
Notes
For a lighter version, you can bake the tortilla wedges until crispy instead of frying. You can also add other toppings such as diced onions, chopped tomatoes, or sliced radishes.
