Ingredients
  

  • 1 can chickpeas rinsed and drained
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion finely chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 3 tablespoons olive oil extra virgin
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste pepper

Instructions
 

  • In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
  • In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Serve immediately or refrigerate for 30 minutes to let the flavors meld.

Notes

Feel free to add other veggies like bell peppers or olives for extra flavor. This salad keeps well in the fridge for up to 3 days.
