Ingredients
  

  • 150 g Smoked salmon Thinly sliced
  • 4 Eggs Hard-boiled and quartered
  • 4 cups Mixed salad greens Washed and dried
  • 1 cup Cherry tomatoes Halved
  • 1/2 cup Cucumber Sliced
  • 1/4 cup Red onion Thinly sliced
  • 3 tbsp Olive oil
  • 1 tbsp Lemon juice Freshly squeezed
  • 1 tsp Dijon mustard
  • 1 tsp Honey
  • to taste Salt and pepper

Instructions
 

  • In a large mixing bowl, combine the salad greens, cherry tomatoes, cucumber, and red onion.
  • Arrange the smoked salmon and quartered hard-boiled eggs on top of the mixed salad.
  • In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until well combined.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Serve the smoked salmon and egg salad immediately, garnished with extra lemon slices if desired.

Notes

For added texture, sprinkle some toasted seeds or nuts on top of the salad before serving.
