Asparagus and Prosciutto Wrapped Eggs Recipe

Follow this recipe to prepare a delicious and elegant appetizer consisting of eggs wrapped in prosciutto and roasted asparagus.

Equipment

  • 1 Baking sheet For roasting the asparagus
  • 1 Non-stick pan For cooking the eggs

Ingredients
  

  • 4 Large eggs
  • 8 slices Prosciutto
  • 1 bunch Asparagus Trimmed
  • 2 tbsp Olive oil
  • to taste Salt and pepper

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Place the trimmed asparagus on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  • Roast the asparagus in the preheated oven for about 10-15 minutes, or until tender.
  • While the asparagus is roasting, heat a non-stick pan over medium heat.
  • Crack the eggs into the pan and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
  • Wrap each cooked egg in two slices of prosciutto.
  • To serve, place the prosciutto-wrapped eggs on a plate with the roasted asparagus on the side.

Notes

For a vegetarian version, substitute prosciutto with thin slices of grilled bell peppers.
