Equipment

  • 1 Toaster or Grill For toasting the bread
  • 1 Pot For poaching the egg
  • 1 Slotted Spoon For removing the poached egg

Ingredients
  

  • 1 slice Bread Whole grain or your choice
  • 1/2 Avocado
  • 1 Egg
  • to taste Salt
  • to taste Pepper
  • optional Red pepper flakes
  • optional Chopped cilantro For garnish

Instructions
 

  • Toast the bread slice to your preferred crunchiness.
  • Mash the avocado in a bowl and season with salt and pepper to taste.
  • Spread the mashed avocado evenly over the toasted bread.
  • Bring a pot of water to a light simmer and add a few drops of vinegar.
  • Crack the egg into a cup and gently pour it into the water. Let it cook for about 3-4 minutes.
  • Using a slotted spoon, remove the egg from the water and drain it on a paper towel.
  • Place the poached egg on top of the mashed avocado toast.
  • Season with additional salt, pepper, red pepper flakes, and garnish with chopped cilantro, if desired.

Notes

For a vegan version, omit the poached egg or substitute with a tofu scramble.
