  • 1 Baking Tray Lined with parchment paper
  • 1 Mixing Bowl For preparing salsa

Ingredients
  

  • 2 Avocados Halved and pitted
  • 4 Eggs
  • to taste Salt
  • to taste Black pepper
  • 1 tsp Chopped chives For garnishing
  • 2 medium Tomatoes Diced
  • 1 Onion Finely chopped
  • 1/4 cup Fresh cilantro Chopped
  • 1 Lime Juiced
  • to taste Salt

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Place avocado halves on a baking tray, and crack an egg into each avocado half. Season with salt and pepper.
  • Bake in the preheated oven for about 15 minutes, or until the eggs are cooked to your liking.
  • In a mixing bowl, combine diced tomatoes, chopped onion, cilantro, and lime juice. Season with salt and mix well.
  • Serve baked avocado eggs immediately with fresh salsa on the side. Garnish with chopped chives.

Notes

Adjust the baking time according to how runny or firm you like your eggs. Adding cheese on top of the eggs before baking can add an extra layer of flavor.
