Equipment

  • 1 Baking sheet or pizza stone For baking the pizza
  • 1 Rolling pin For rolling out the pizza dough

Ingredients
  

  • 1 lb Pizza dough Store-bought or homemade
  • 1 tbsp Olive oil
  • 4 slices Bacon Cooked and chopped
  • 2 cups Baby spinach Fresh
  • 1 cup Mozzarella cheese Shredded
  • 4 Eggs
  • to taste Salt and pepper

Instructions
 

  • Preheat your oven to 475°F (245°C) and place the baking sheet or pizza stone inside.
  • On a floured surface, roll out the pizza dough to your desired thickness.
  • Transfer the rolled dough onto a piece of parchment.
  • Brush the surface of the dough lightly with olive oil.
  • Spread the shredded mozzarella cheese evenly over the dough.
  • Add the cooked bacon and fresh baby spinach on top of the cheese.
  • Carefully crack the eggs onto the pizza, distributing them evenly.
  • Season with salt and pepper to taste.
  • Slide the pizza (with the parchment) onto the preheated baking sheet or stone.
  • Bake for 12-15 minutes, or until the crust is golden and the eggs are set but still slightly runny.
  • Remove from the oven, let it cool for a minute, then slice and serve.

Notes

For a vegetarian option, skip the bacon or replace it with a vegetarian substitute. To make it healthier, consider using a whole wheat pizza dough.
