Equipment

  • 1 9-inch pie dish
  • 1 Mixing bowl For preparing the custard mixture
  • 1 Baking sheet Optional, for roasting asparagus

Ingredients
  

  • 1 Prepared pie crust
  • 1 bunch Asparagus Trimmed and cut into 1-inch pieces
  • 4 Large eggs
  • 1 cup Heavy cream
  • 1 cup Grated cheese Gruyere or Swiss recommended
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 tsp Nutmeg Optional

Instructions
 

  • Blanch asparagus in boiling water for 2-3 minutes, then transfer to ice water to stop the cooking process.
  • Drain and set aside.
  • Preheat oven to 375°F (190°C).
  • Place the prepared pie crust in a 9-inch pie dish.
  • Spread out the blanched asparagus and grated cheese evenly over the pie crust.
  • In a mixing bowl, whisk together eggs, heavy cream, salt, black pepper, and nutmeg.
  • Pour the egg mixture over the asparagus and cheese.
  • Bake for 45-50 minutes or until the quiche is set and the top is golden brown.
  • Let cool for a few minutes before slicing and serving.

Notes

For a lighter version, you can substitute the heavy cream with half-and-half or whole milk. Feel free to use other vegetables in addition to or in place of asparagus.
