Ingredients
  

  • 2 cups Cooked rice Chilled
  • 2 Eggs Lightly beaten
  • 1/2 cup Carrots Grated
  • 1/2 cup Zucchini Grated
  • 1/4 cup Green onions Chopped
  • 1 cup Breadcrumbs
  • to taste Salt and pepper
  • as needed Cooking oil For frying

Instructions
 

  • In a large bowl, mix together the rice, eggs, carrots, zucchini, green onions, breadcrumbs, salt, and pepper until well combined.
  • Form the mixture into patties, pressing firmly so they hold together.
  • Heat cooking oil in a frying pan over medium heat.
  • Place the patties in the pan and cook until golden brown and crispy, about 4-5 minutes on each side.
  • Transfer the cooked patties onto a paper towel-lined plate to drain excess oil.
  • Serve warm with your favorite sauce or as is.

Notes

Customize the patties by adding different vegetables or cheese to the mixture for extra flavor.
