Ingredients

  • 8 slices of good-quality white bread
  • 8 slices of ham
  • 8 slices of Gruyère or Emmental cheese
  • 4 large eggs
  • 3 tbsp unsalted butter, divided
  • 2 cup béchamel sauce (homemade or store-bought)
  • Salt and pepper, to taste
  • Optional: chopped fresh parsley for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
Assemble the sandwiches by placing a slice of ham and a slice of cheese on four slices of bread. Top each sandwich with another slice of bread.
  • In a large oven-safe skillet, melt 2 tablespoons of butter over medium heat. Place the sandwiches in the skillet, and cook until the bread is golden brown and crispy, about 3 minutes per side.
  • Spread a generous layer of béchamel sauce on top of each sandwich, followed by another slice of cheese.
  • Transfer the skillet to the preheated oven and bake for approximately 10 minutes, or until the cheese is melted and bubbly.
  • While the sandwiches are baking, melt the remaining 1 tablespoon of butter in a non-stick skillet over medium heat. Fry the eggs until the whites are set but the yolks are still slightly runny.
  • Remove the sandwiches from the oven, and carefully place a fried egg on top of each one.
  • Season with salt and pepper, and garnish with fresh parsley, if desired. Serve immediately and enjoy your delicious Croque Madame!
