- 8 slices of good-quality white bread
- 8 slices of ham
- 8 slices of Gruyère or Emmental cheese
- 4 large eggs
- 3 tbsp unsalted butter, divided
- 2 cup béchamel sauce (homemade or store-bought)
- Salt and pepper, to taste
- Optional: chopped fresh parsley for garnish
Preheat your oven to 400°F (200°C).Assemble the sandwiches by placing a slice of ham and a slice of cheese on four slices of bread. Top each sandwich with another slice of bread. In a large oven-safe skillet, melt 2 tablespoons of butter over medium heat. Place the sandwiches in the skillet, and cook until the bread is golden brown and crispy, about 3 minutes per side.
Spread a generous layer of béchamel sauce on top of each sandwich, followed by another slice of cheese.
Transfer the skillet to the preheated oven and bake for approximately 10 minutes, or until the cheese is melted and bubbly.
While the sandwiches are baking, melt the remaining 1 tablespoon of butter in a non-stick skillet over medium heat. Fry the eggs until the whites are set but the yolks are still slightly runny.
Remove the sandwiches from the oven, and carefully place a fried egg on top of each one.
Season with salt and pepper, and garnish with fresh parsley, if desired. Serve immediately and enjoy your delicious Croque Madame!
