- 1/4 cup milk
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup chopped spinach
- Non-stick cooking spray
Preheat oven to 375°F (190°C).In a large bowl, whisk together eggs, milk, salt, and pepper. Stir in cheese, bell peppers, onions, and spinach.
Grease a 12-cup muffin tin with non-stick cooking spray.
Evenly divide the egg mixture among the muffin cups.
Bake for 20-25 minutes or until the egg is set and a toothpick inserted comes out clean.
Allow to cool slightly before removing from the muffin tin. Serve warm.
