Ingredients
  

  • 6 large eggs
  • 1/4 cup milk
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup chopped spinach
  • Non-stick cooking spray

Instructions
 

  • Preheat oven to 375°F (190°C).
    In a large bowl, whisk together eggs, milk, salt, and pepper.
  • Stir in cheese, bell peppers, onions, and spinach.
  • Grease a 12-cup muffin tin with non-stick cooking spray.
  • Evenly divide the egg mixture among the muffin cups.
  • Bake for 20-25 minutes or until the egg is set and a toothpick inserted comes out clean.
  • Allow to cool slightly before removing from the muffin tin. Serve warm.
