Equipment

  • 1 Muffin tin For holding the ham and egg mixture
  • 1 Bowl For whisking eggs

Ingredients
  

  • 6 Slices of ham Thinly sliced
  • 6 Large eggs
  • 1/2 cup Shredded cheese Cheddar or your choice
  • 1/4 cup Diced bell peppers Any color
  • to taste Salt and pepper
  • 1 tbsp Chopped chives For garnish

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Line each cup of a muffin tin with a slice of ham, pressing it against the sides and bottom.
  • In a bowl, whisk the eggs and season with salt and pepper.
  • Pour the egg mixture into each ham cup, filling it about 3/4 full.
  • Sprinkle shredded cheese and diced bell peppers on top of each filled cup.
  • Bake in the preheated oven for 18-20 minutes, or until the eggs are fully set.
  • Remove from the oven and let it cool slightly before removing the breakfast cups from the muffin tin.
  • Garnish with chopped chives and serve warm.

Notes

You can customize these breakfast cups by adding your favorite vegetables or using different types of cheese.
