Equipment

  • 1 Non-stick skillet For cooking the eggs and mushrooms
  • 1 Spatula

Ingredients
  

  • 8 Eggs Lightly beaten
  • 1 cup Mushrooms Chopped
  • 8 Tortillas Warm
  • 1 tbsp Butter Or olive oil
  • 1/2 cup Cheddar cheese Shredded
  • to taste Salt
  • to taste Pepper
  • 1/4 cup Fresh cilantro Chopped
  • 1 Avocado Sliced
  • 1 Lime Cut into wedges
  • 1/2 cup Salsa For serving

Instructions
 

  • Heat butter in a non-stick skillet over medium heat, add mushrooms, and sauté until tender.
  • Push mushrooms to the side of the skillet and pour eggs into the other side, scrambling gently until cooked to desired consistency. Season with salt and pepper.
  • Mix mushrooms with the scrambled eggs and remove from heat.
  • Place a generous spoonful of the egg and mushroom mixture onto each warm tortilla.
  • Sprinkle with shredded cheddar cheese and top with fresh cilantro, avocado slices, and salsa.
  • Serve with lime wedges on the side for squeezing over the tacos.

Notes

For extra flavor, add a sprinkle of your favorite hot sauce.
