  • 2 large eggs
  • 2 tbsp cream cheese
  • 2 oz smoked salmon
  • 1 plain or everything bagel
  • 1 tbsp fresh chives, chopped
  • Salt and pepper to taste
  • Butter or oil for cooking

Instructions
 

  • Prepare the Eggs:
    Crack the eggs into a bowl and whisk them together until well combined. Season with a pinch of salt and a dash of pepper. Heat a non-stick skillet over medium-low heat and add a small amount of butter or oil to coat the pan. Pour the beaten eggs into the skillet and gently scramble them, stirring occasionally. Cook until they are just set but still slightly creamy. Remove from heat.
  • Toast the Bagel:
    While the eggs are cooking, split the bagel in half and toast it to your preferred level of crispiness.
  • Assemble the Sandwich:
    Once the bagel is toasted, spread cream cheese generously on each half. Layer the scrambled eggs onto the bottom half of the bagel.Next, add the smoked salmon, ensuring it's evenly distributed. Sprinkle fresh chives over the salmon for a burst of flavor. Finally, place the top half of the bagel on the sandwich to complete it.
