  • 1 Muffin tin For baking the egg bites
  • 1 Mixing bowl For mixing the ingredients

Ingredients
  

  • 8 Eggs Large
  • 1/2 cup Milk Or substitute with a dairy-free option
  • 1/2 cup Cheddar cheese Shredded
  • 1/2 cup Bell peppers Diced
  • 1/4 cup Onions Finely chopped
  • 1/4 cup Spinach Chopped
  • to taste Salt
  • to taste Black pepper
  • 1 tbsp Olive oil For greasing the muffin tin

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Grease the muffin tin with olive oil to prevent sticking.
  • In a mixing bowl, whisk together the eggs and milk until well combined.
  • Add the cheddar cheese, bell peppers, onions, spinach, salt, and black pepper to the egg mixture, and stir to combine.
  • Pour the mixture evenly into the muffin tin cups.
  • Bake in the preheated oven for 18-20 minutes or until the egg bites are set and lightly golden on top.
  • Let them cool for a few minutes before removing from the tin. Serve warm.

Notes

Feel free to customize with your favorite mix-ins like bacon, mushrooms, or different cheeses.
