Follow this recipe to prepare a delicious Egg & Mushroom Toast, a quick and easy breakfast dish featuring creamy mushrooms topped with poached eggs served on toasted bread.

Equipment

  • 1 Frying pan For cooking mushrooms
  • 1 Toaster For toasting the bread
  • 1 Saucepan For poaching eggs

Ingredients
  

  • 4 Eggs Poached
  • 200 g Mushrooms Sliced
  • 4 slices Bread Toasted
  • 2 tbsp Olive oil
  • 1/4 cup Heavy cream
  • 1 tsp Garlic Minced
  • to taste Salt and pepper
  • 1 tbsp Chopped parsley For garnish

Instructions
 

  • Heat olive oil in a pan and add minced garlic, sauté for 30 seconds.
  • Add sliced mushrooms and cook until lightly browned.
  • Stir in heavy cream, and cook for another 2-3 minutes until the sauce thickens, season with salt and pepper.
  • Meanwhile, poach eggs in a saucepan of simmering water until egg whites are set.
  • Toast the bread slices until golden brown.
  • Assemble by placing creamy mushrooms on toasted bread and top each with a poached egg.
  • Garnish with chopped parsley and serve immediately.

Notes

For a lighter version, use whole-grain bread and replace cream with low-fat milk.
