  • 1 Non-stick skillet For cooking the eggs and spinach
  • 1 Mixing Bowl For whisking the eggs

Ingredients
  

  • 4 Eggs Beaten
  • 2 cups Spinach Fresh, roughly chopped
  • 1/2 cup Feta cheese Crumbled
  • 2 Whole wheat tortillas
  • to taste Salt and pepper
  • 1 tbsp Olive oil For cooking

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add the beaten eggs to the skillet, stirring gently until they begin to set.
  • Add the chopped spinach and cook until wilted and the eggs are fully cooked.
  • Season with salt and pepper to taste.
  • Stir in the crumbled feta cheese until evenly distributed.
  • Lay a whole wheat tortilla flat on a plate.
  • Spoon half of the egg mixture down the center of the tortilla.
  • Fold the sides of the tortilla over the filling, then roll it up to close.
  • Repeat with the remaining tortilla and egg mixture.
  • Serve immediately or wrap in foil for a grab-and-go meal.

Notes

For a gluten-free option, use gluten-free tortillas. Add diced tomatoes or avocados for extra flavor and nutrition.
