  • 1 Oven For baking potatoes
  • 1 Aluminium foil Optional, for wrapping potatoes

Ingredients
  

  • 4 Large potatoes Well scrubbed
  • 4 Large eggs
  • 1 tbsp Olive oil Extra virgin
  • to taste Salt and pepper
  • 1/2 cup Shredded cheese Your choice of cheese
  • 2 tbsp Chopped chives For garnishing

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Prick potatoes with a fork, brush with olive oil, and season with salt. Bake for about 40 minutes or until tender.
  • Cut a thin slice off the top of each potato, carefully scoop out some flesh to make room for the egg.
  • Crack one egg into each potato, season with salt and pepper, and top with shredded cheese.
  • Return to the oven and bake for an additional 15 minutes, or until the egg whites are set and the yolk is still slightly runny or to your preference.
  • Garnish with chopped chives and serve immediately.

Notes

Feel free to customize the filling by adding cooked bacon, mushrooms, or onions for an extra layer of flavor.
