  • 4 Large potatoes Well scrubbed
  • 4 Large eggs
  • 1 tbsp Olive oil Extra virgin
  • to taste Salt and pepper
  • 1/2 cup Shredded cheese Your choice of cheese
  • 2 tbsp Chopped chives For garnishing
