Ingredients
  

  • 4 large eggs
  • 2 tbsp vegetable oil
  • 1/2 cup diced bell pepper
  • 1/2 cup diced zucchini
  • 1/2 cup diced carrot
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • Salt and black pepper, to taste

Instructions
 

  • In a bowl, beat the eggs and season them with a pinch of salt and black pepper.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the beaten eggs and cook until set, stirring occasionally. Remove the cooked eggs from the skillet and set aside.
  • Add the remaining tablespoon of oil to the skillet. Stir-fry the bell pepper, zucchini, onion, and carrot for about 3-4 minutes, or until they are tender-crisp. Add the minced garlic and cook for an additional 30 seconds.
  • Stir in the soy sauce and oyster sauce, then add the cooked eggs back into the skillet. Stir to combine, and cook for another 1-2 minutes to heat through. Season with additional salt and black pepper to taste before serving.
