Equipment

  • 1 Frying pan For cooking the eggs and tomato sauce
  • 1 Pot For cooking the rice

Ingredients
  

  • 1 cup Rice Cooked
  • 2 Eggs Large
  • 2 tbsp Cooking oil
  • 2 medium Tomatoes Diced
  • 2 cloves Garlic Minced
  • 1 tsp Soy sauce
  • to taste Salt
  • to taste Black pepper

Instructions
 

  • Start by cooking the rice according to package instructions.
  • Heat 1 tbsp of cooking oil in a frying pan over medium heat and fry the eggs to your desired doneness. Set aside.
  • In the same pan, add another tablespoon of oil and sauté the minced garlic until fragrant.
  • Add the diced tomatoes and cook until they become soft and start releasing their juices.
  • Stir in soy sauce, salt, and pepper to taste.
  • Serve the tomato sauce over the cooked rice, and top each plate with a fried egg.
  • Enjoy the dish warm.

Notes

For an extra kick, add a dash of hot sauce to the tomato mixture.
