Equipment

  • 1 Blender or food processor For making the pesto sauce
  • 1 Large Pot For cooking pasta
  • 1 Skillet For tossing pasta with pesto

Ingredients
  

  • 1 cup Garlic scapes Chopped
  • 1/2 cup Basil leaves Fresh
  • 1/4 cup Pine nuts Toasted
  • 1/2 cup Parmesan cheese Grated
  • 1/4 cup Olive oil
  • 12 oz Pasta Any type
  • to taste Salt
  • to taste Black pepper Freshly ground

Instructions
 

  • In a blender, combine garlic scapes, basil, pine nuts, Parmesan cheese, and olive oil. Blend until smooth.
  • Cook the pasta according to package instructions in a large pot of salted boiling water. Drain the pasta, reserving some pasta water.
  • In a skillet, heat the garlic scape pesto. Add the cooked pasta and toss to coat, adding reserved pasta water as needed to loosen the sauce.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with additional Parmesan cheese and basil leaves.

Notes

Toasted walnuts or almonds can be substituted for pine nuts in the pesto.
