Ingredients
  

  • 1 cup Mixed greens
  • 1 cup Cherry tomatoes Halved
  • 1 piece Avocado Diced
  • 2 pieces Boiled eggs Sliced
  • 1/4 cup Red onion Thinly sliced
  • 1/2 cup Cucumber Chopped
  • 1/4 cup Feta cheese Crumbled
  • 2 tbsp Extra virgin olive oil
  • 1 tbsp Lemon juice
  • to taste Salt
  • to taste Black pepper

Instructions
 

  • In a large salad bowl, combine mixed greens, cherry tomatoes, avocado, boiled eggs, red onion, cucumber, and feta cheese.
  • Drizzle olive oil and lemon juice over the salad.
  • Season with salt and black pepper to taste.
  • Toss gently to combine all ingredients.
  • Serve immediately.

Notes

You can add cooked quinoa or chickpeas for extra protein and fiber.
