  • 1 Oven-safe skillet Preferably non-stick or cast iron

Ingredients
  

  • 2 cups Kale Chopped and stems removed
  • 8 Eggs Beaten
  • 1/2 cup Feta cheese Crumbled
  • 1/4 cup Milk Any kind, for fluffiness
  • 2 tbsp Olive oil
  • 1 Garlic clove Minced
  • to taste Salt and pepper

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a mixing bowl, whisk together the eggs, milk, salt, and pepper.
  • Heat olive oil in an oven-safe skillet over medium heat. Sauté garlic until fragrant, about 1 minute.
  • Add the kale to the skillet, sautéing until slightly wilted, about 3-5 minutes.
  • Pour the egg mixture over the kale in the skillet. Allow to cook without stirring for about 2 minutes until the edges begin to set.
  • Sprinkle the feta cheese evenly over the top.
  • Transfer the skillet to the oven and bake for 15-18 minutes, or until the center is set and the edges are lightly golden.
  • Remove from oven, let it cool slightly, and serve.

Notes

You can customize this frittata by adding other vegetables or herbs as desired. For a dairy-free version, omit the feta cheese or use a dairy-free substitute.
