Kale Caesar Pasta Salad with Soft-Boiled Eggs Recipe

Equipment

  • 1 Large Pot For boiling pasta and eggs
  • 1 Large mixing bowl For tossing the salad

Ingredients
  

  • 200 g Pasta Preferably short shape, like fusilli or bow ties
  • 1 bunch Kale chopped and stems removed
  • 4 Eggs For soft boiling
  • 1/2 cup Caesar dressing Homemade or store-bought
  • 1/4 cup Parmesan cheese Grated
  • to taste Salt and pepper

Instructions
 

  • Boil the pasta according to package instructions until al dente. Drain and let cool.
  • In the same pot, soft boil the eggs for 7 minutes. Immediately transfer to an ice bath to stop the cooking process. Once cooled, peel and cut in half.
  • In a large bowl, mix the chopped kale with Caesar dressing until evenly coated.
  • Add the cooled pasta and toss again to mix well.
  • Top the salad with soft-boiled eggs, grated Parmesan cheese, and a sprinkle of salt and pepper to taste.

Notes

For a lighter version, use yogurt-based Caesar dressing. Add croutons for extra crunch.
