Ingredients
  

  • 2 tbsp Olive oil
  • 1 Onion Finely chopped
  • 2 cloves Garlic Minced
  • 1 can Tomato sauce 15 oz
  • 1/2 cup Maple syrup
  • 1 tbsp Apple cider vinegar
  • 2 tsp Dijon mustard
  • 4 cups Cooked white beans Or 2 cans, rinsed and drained
  • to taste Salt and pepper
  • 4 Eggs Large
  • as needed Chopped parsley For garnish

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a Dutch oven or oven-safe skillet over medium heat. Add chopped onion and sauté until translucent.
  • Add minced garlic and cook for another 1-2 minutes.
  • Stir in the tomato sauce, maple syrup, apple cider vinegar, and Dijon mustard. Cook for 5 minutes, stirring occasionally.
  • Add the cooked white beans to the mixture. Season with salt and pepper to taste. Stir well to combine.
  • Transfer the skillet or Dutch oven to the preheated oven and bake for 25-30 minutes, until the sauce has thickened and the beans are tender.
  • Remove the beans from the oven, make four wells in the beans with the back of a spoon.
  • Crack an egg into each well.
  • Return the skillet or Dutch oven to the oven and bake for an additional 10-12 minutes, until the eggs are set to your liking.
  • Remove from the oven and let cool slightly.
  • Garnish with chopped parsley and serve warm.

Notes

For a vegetarian variation, the beans can be cooked with vegetable broth instead of water for added flavor.
