Equipment

  • 1 Non-stick skillet For cooking the omelet
  • 1 Mixing bowl For beating the egg whites

Ingredients
  

  • 6 Egg whites
  • 2 handfuls Fresh spinach Roughly chopped
  • 1/4 cup Feta cheese Crumbled
  • 1 tbsp Olive oil
  • to taste Salt and pepper
  • 2 tsp Chopped fresh herbs (such as dill or parsley, optional)

Instructions
 

  • In a mixing bowl, beat the egg whites until frothy. Season with salt and pepper.
  • Heat olive oil in a non-stick skillet over medium heat.
  • Pour the egg whites into the skillet, spreading them out evenly.
  • As the edges start to set, gently lift them with a spatula and tilt the pan to allow the uncooked egg whites to flow underneath.
  • When the omelet is almost set, but the top is still slightly runny, add the chopped spinach and crumbled feta over one half of the omelet.
  • Carefully fold the other half of the omelet over the filling. Cook for another minute or until the omelet is fully set and the filling is heated through.
  • Slide the omelet onto a plate, garnish with fresh herbs if using, and serve immediately.

Notes

For added flavor, consider sautéing a bit of garlic or onion in the skillet before adding the egg whites.
