Equipment

  • 1 Non-stick skillet For cooking the eggs and vegetables
  • 1 Spatula For stirring the eggs

Ingredients
  

  • 4 large Eggs Beaten
  • 1 cup Spinach Fresh
  • 1 small Tomato Diced
  • 1/4 cup Red onion Finely chopped
  • 1/4 cup Feta cheese Crumbled
  • 2 tbsp Olive oil
  • 2 large Whole wheat wraps
  • to taste Salt and pepper

Instructions
 

  • Heat olive oil in a non-stick skillet over medium heat.
  • Add the onions and tomatoes, and sauté until soft.
  • Add spinach and cook until wilted.
  • Pour in the beaten eggs, season with salt and pepper, and scramble until cooked through.
  • Remove from heat and stir in the crumbled feta cheese.
  • Place the egg mixture onto each wrap, fold, and roll tightly.
  • Serve warm and enjoy your Mediterranean Egg Wrap!

Notes

For an extra flavor boost, add a drizzle of tzatziki sauce before wrapping.
