Equipment

  • 1 Non-stick skillet For cooking the eggs and mushrooms
  • 1 Whisk For beating the eggs

Ingredients
  

  • 8 Slider buns Split in half
  • 6 Eggs Beaten
  • 1 cup Mushrooms Sliced
  • 1 tbsp Butter For cooking
  • 1/2 cup Shredded cheese Cheddar or mozzarella
  • to taste Salt and pepper
  • 1 tbsp Chives Chopped, optional

Instructions
 

  • Heat butter in a non-stick skillet over medium heat and sauté mushrooms until tender.
  • Season the mushrooms with salt and pepper, then remove and set aside.
  • In the same skillet, add the beaten eggs and cook, stirring frequently, until soft and fluffy.
  • Return the mushrooms to the pan and mix with the scrambled eggs.
  • Stir in shredded cheese and cook until it melts.
  • To assemble, divide the egg and mushroom mixture evenly among the slider buns.
  • Garnish with chopped chives if desired, and serve warm.

Notes

For an extra twist, add a slice of avocado or some crispy bacon to each slider.
