Equipment

  • 1 Blender For blending the pancake batter
  • 1 Non-stick skillet For cooking the pancakes to golden perfection

Ingredients
  

  • 1 cup Rolled oats Use gluten-free oats for a GF option
  • 4 Egg whites Room temperature
  • 1/2 cup Greek yogurt Can substitute with dairy-free yogurt
  • 1 tbsp Honey Or sweetener of choice
  • 1/2 tsp Baking powder
  • 1/2 tsp Vanilla extract
  • Pinch Salt
  • 1/2 cup Fresh strawberries Sliced
  • 1/2 cup Fresh blueberries
  • 1/4 cup Maple syrup Optional, for serving

Instructions
 

  • Place the rolled oats, egg whites, Greek yogurt, honey, baking powder, vanilla extract, and a pinch of salt in a blender. Blend until the mixture is smooth.
  • Let the batter sit for 5 minutes to thicken slightly.
  • Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface, then flip and cook until golden and cooked through.
  • Repeat with the remaining batter, adjusting heat as needed.
  • Serve the pancakes warm, topped with sliced strawberries, blueberries, and a drizzle of maple syrup if desired.

Notes

You can customize the toppings with your favorite fruits or nuts for added texture and flavor.
