Ingredients
  

  • 1 cup dashi stock
  • 1/4 cup soy sauce
  • 1/4 cup mirin
  • 2 sugar sugar
  • 1 small onion, thinly sliced
  • 1 boneless, skinless chicken thighs, cut into bite-sized pieces
  • 4 large eggs, lightly beaten
  • 4 servings cooked Japanese short-grain rice
  • Sliced green onions, for garnish
  • Pickled ginger (beni shoga), for garnish (optional)

Instructions
 

  • In a medium-sized saucepan, combine the dashi stock, soy sauce, mirin, and sugar. Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves.
  • Add the sliced onion to the saucepan and cook for 3-4 minutes, or until softened.
  • Add the chicken pieces to the saucepan, spreading them out evenly. Cook for 4-5 minutes, or until the chicken is cooked through.
  • Slowly drizzle the beaten eggs over the chicken and onion mixture. Cover the saucepan with a lid and let the eggs cook for about 1-2 minutes, or until they are just set but still slightly runny.
  • To serve, divide the cooked rice among four bowls. Spoon the chicken, egg, and sauce mixture over the rice. Garnish with sliced green onions and pickled ginger, if desired. Enjoy your Oyakodon piping hot!
