- 4 large eggs
- 4 packs (3 oz each) instant ramen noodles (discard seasoning packets)
- 1 tbsp vegetable oil
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 1 tbsp grated fresh ginger
- 6 cup low-sodium chicken broth
- 2 tbsp soy sauce
- 2 tbsp mirin (sweet rice wine)
- 1 tbsp miso paste
- 4 green onions, sliced
- Optional toppings: sliced mushrooms, bean sprouts, seaweed, corn, or any desired vegetables
Fill a medium saucepan with water and bring it to a boil. Gently lower the eggs into the boiling water and cook them for 6-7 minutes for a soft-boiled consistency. Immediately transfer the eggs to a bowl of ice water to stop the cooking process. Once cooled, peel the eggs and set them aside.
In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger, and cook until fragrant and softened, about 5 minutes.
Pour the chicken broth into the pot, and stir in the soy sauce, mirin, and miso paste. Bring the broth to a boil, then reduce the heat and let it simmer for 20 minutes to develop the flavors.
Meanwhile, cook the ramen noodles according to the package instructions. Drain the noodles and divide them among four serving bowls.
Strain the broth through a fine-mesh sieve to remove any solids, and then ladle the broth over the noodles in each bowl.
Slice the soft-boiled eggs in half and place two halves in each bowl of ramen. Garnish with sliced green onions and any desired toppings.
