Ingredients
  

  • 4 large eggs
  • 4 packs (3 oz each) instant ramen noodles (discard seasoning packets)
  • 1 tbsp vegetable oil
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 6 cup low-sodium chicken broth
  • 2 tbsp soy sauce
  • 2 tbsp mirin (sweet rice wine)
  • 1 tbsp miso paste
  • 4 green onions, sliced
  • Optional toppings: sliced mushrooms, bean sprouts, seaweed, corn, or any desired vegetables

Instructions
 

  • Fill a medium saucepan with water and bring it to a boil. Gently lower the eggs into the boiling water and cook them for 6-7 minutes for a soft-boiled consistency. Immediately transfer the eggs to a bowl of ice water to stop the cooking process. Once cooled, peel the eggs and set them aside.
  • In a large pot, heat the vegetable oil over medium heat. Add the onion, garlic, and ginger, and cook until fragrant and softened, about 5 minutes.
  • Pour the chicken broth into the pot, and stir in the soy sauce, mirin, and miso paste. Bring the broth to a boil, then reduce the heat and let it simmer for 20 minutes to develop the flavors.
  • Meanwhile, cook the ramen noodles according to the package instructions. Drain the noodles and divide them among four serving bowls.
  • Strain the broth through a fine-mesh sieve to remove any solids, and then ladle the broth over the noodles in each bowl.
