  • 1 Grater For grating the potatoes
  • 1 Mixing bowl For mixing the ingredients
  • 1 Non-stick skillet For frying the pancakes

Ingredients
  

  • 4 Potatoes Medium-sized, peeled and grated
  • 2 Eggs Beaten
  • 1 small Onion Finely chopped
  • 2 tbsp All-purpose flour
  • 1 tsp Salt To taste
  • 1 tsp Black pepper Freshly ground
  • 2 tbsp Chopped parsley Optional
  • for frying Vegetable oil

Instructions
 

  • Grate the potatoes and squeeze out the excess moisture using a clean kitchen towel.
  • In a mixing bowl, combine the grated potatoes, beaten eggs, chopped onion, flour, salt, pepper, and parsley. Mix well.
  • Heat oil in a non-stick skillet over medium heat.
  • Scoop a spoonful of the potato mixture and flatten it into a pancake shape on the skillet.
  • Cook each pancake for about 3-4 minutes on each side or until golden brown and crispy.
  • Repeat with the remaining mixture, adding more oil to the skillet as needed.
  • Serve hot with a side of sour cream or yogurt.

Notes

For an extra flavor boost, you can add grated cheese or chopped herbs like rosemary or thyme.
