Enjoy a hearty and delicious meal with this simple Scrambled Egg Quesadilla recipe. It combines fluffy scrambled eggs, cheese, and your choice of vegetables or meats, all wrapped in a crispy tortilla.

Equipment

  • 1 Non-stick skillet For cooking the eggs and quesadillas

Ingredients
  

  • 4 large Eggs Beaten
  • 2 tbsp Milk Optional, for fluffier eggs
  • 1/2 cup Shredded cheese Cheddar, mozzarella, or a mix
  • 2 Flour tortillas Medium size
  • to taste Salt and pepper
  • as needed Butter or oil For cooking
  • optional Add-ins Diced vegetables, cooked ham, bacon, sausage

Instructions
 

  • In a bowl, whisk together eggs, milk (if using), salt, and pepper.
  • Heat a non-stick skillet over medium heat, add a little butter or oil.
  • Pour in the egg mixture. Let it sit, without stirring, for a few seconds until it starts to set around the edges.
  • Gently stir and fold the eggs until they're softly set and slightly runny in places. Remove from heat.
  • Wipe the skillet clean. Place it over medium heat and add a flour tortilla.
  • On one half of the tortilla, sprinkle a portion of the cheese. Top with half of the scrambled eggs and any additional add-ins. Fold the tortilla over to cover the filling.
  • Cook until the bottom is golden brown, about 2 minutes. Flip carefully and cook the other side until golden brown and the cheese is melted.
  • Repeat with the remaining tortilla, cheese, and eggs.
  • Cut the quesadillas into wedges and serve immediately.

Notes

Feel free to customize your quesadilla with your favorite cheeses, meats, or vegetables. For a lighter version, use whole wheat tortillas and low-fat cheese.
