Equipment

  • 1 Non-stick skillet For cooking eggs
  • 1 Spatula For scrambling eggs

Ingredients
  

  • 4 Eggs Lightly beaten
  • 1 tbsp Olive oil
  • 200 g Smoked salmon Thinly sliced
  • 2 Whole wheat tortillas
  • 1 cup Baby spinach Washed
  • 1/2 cup Cherry tomatoes Halved
  • to taste Salt and pepper

Instructions
 

  • Heat olive oil in a non-stick skillet over medium heat.
  • Pour in the beaten eggs and season with salt and pepper.
  • Scramble the eggs gently until cooked through, then remove from heat.
  • Lay out the tortillas on a clean surface.
  • Evenly distribute the scrambled eggs, smoked salmon, baby spinach, and cherry tomatoes onto each tortilla.
  • Roll the tortillas tightly to form wraps.
  • Cut each wrap in half and serve immediately.

Notes

Feel free to add other vegetables like avocado or cucumbers for added flavor and texture.
